The Aegean islands are famous for their fava production.However, Santorini fava beans are the most famous. It comes from the plant lathouri, and we usually taste it in the form of puree. Its taste is memorable and unique and belongs primarily to Mediterranean food. Although it is a legume, it is considered a summer food and a lovely accompaniment for a glass of wine.
